Tea & Yerba Mate
Next to water, tea is the most affordable drink in the world. According to Chinese mythology the first cup of tea was made in 2737 BC, when the Chinese Emperor, Shen Nung, scholar and herbalist, was sitting beneath a tree while his servant boiled drinking water. A leaf from the tree dropped into the water and Shen Nung decided to try the brew. The tree was a wild tea tree. The first time tea is recorded in England was 1644 when sailors bringing back packets of tea from the Far East as presents led to its introduction into London’s coffee houses.

Brewing Tips for Tea

  1. Always use clean utensils. The typical brown coating in a teapot will harm the taste.
  2. Use cold, fresh water. Cold water contains a lot of oxygen, which gives the tea its full flavor.
  3. Do not over fill the strainer. Tea leaves need room to swirl to give off their full flavor.
  4. Add one teaspoonful per cup, then add one for the pot.
  5. Pour water onto the tea the moment it starts to boil. Do not allow it to "over-boil" since the oxygen is boiled off.
  6. The amount of time tea should stand and draw will vary depending on the variety of tea. Less time for green tea and more time for black tea. Letting green tea draw for too long will make it bitter.

Rooibos (organic) -- This gift of nature from South Africa is laden with antioxidants. Yet, unlike green teas rooibos is caffeine free and certified organic. Documented to contain very high levels of antioxidants, Vitamin C, iron, potassium, calcium, copper, zinc other minerals and fluoride, this is health in a cup.

Ti Kuan Yin (Oolong) - This Chinese classic carries the story of a local farmer instructed by the iron goddess of mercy in a dream to look in the cave behind her temple. There he found a single tea shoot that he planted and cared for. This meditative, deep rich tea fills your palate with fruit-like flavor and a heady aroma. Good for multiple infusions.
